The Breakfast Cookie Mix (Article Link)
Dry mix ahead:
- 2 cups rolled oats
- 1/3 cup raisins
- 1/3 cup whole wheat flour
- 1/3 cup wheat germ
- 1/3 cup flaxseed meal
- 1/3 cup coconut flakes
- 1/2 cup walnuts, chopped (I crush them in my hands)
- 2/3 cup soy flour (for non dairy, use powdered milk to add dairy)
- 1 1/2 tsp cinnamon
- 1 1/2 tsp baking powder
- 1 1/2 salt
- 1/4 cup brown sugar
- (Might want o try 1/3 cup chocolate chips)
Wet mix right before baking:
- 1 1/2 cups apple sauce
1. Preheat oven to 350 degrees and grease large cookie sheet
2. Mix 1 1/2 cups apple sauce into the dry mix.
3. Scoop out with an ice cream scoop and smash with your fingers (to 1/2”-3/4”)
4. Bake for 20 minutes, place on cooling rack and turn off the oven
